Grape Varieties: 50% Pinot Blanc + 50% Pinot Auxerrois.
Production: The grapes are carefully hand picked. At the press house the whole, uncrushed grapes are placed directly into pneumatic presses. Pressing is limited to give 100 liters of juice from 150kg of grapes (compared with 130kg of grapes for the still Alsace wines). The first fermentation takes place in temperature controlled stainless steel tanks. The rest of the winemaking process follows the traditional method. The second fermentation takes place in the bottle. Rumuage or riddling is made on computer programmed gyropalettes. Dégorgement occurs after approximately 24 months of aging.
Appearance: Light straw color with a green hue.
Nose: Fruity nose revealing flavors of white flowers and citrus fruit.
Taste: Pinot Auxerrois lends itself to a creamy palate, followed by the crisp pear, fresh melon and balanced minerality of the Pinot Blanc. Mildly floral.
Gastronomy: As an aperitif or Kir Royal. With charcuterie. Typical of brut sparkling it’s acidity plays well with most foods.

Appearance: Pale straw in color with a steady stream of pinpoint bubbles.
Nose: Expressive nose with hints of dried fruit and toast, aromatically complex.
Taste: The attack on the palate is full and creamy and followed by a finish that is harmonious and dry.
Gastronomy: Ideal on its own, or can be enjoyed with many different types of cuisine.

Production: Organically grown grapes are hand harvested followed by a short skin contact maceration before pressing. Controlled temperature fermentation takes place in stainless steel tanks.
Appearance: Pale pink.
Nose: Fresh red fruits.
Taste: Light bodied wine of cherries and summer berries, especially strawberry. Mineral dry and fresh finish.
Gastronomy: On its own on a warm day, with summer salads, grilled meats, and desserts with berries.

Appearance: Soft rose color.
Nose: Ripe red fruits including currant.
Taste: Soft and ripe, with balanced acidity. Persistent crisp finish of tart raspberry.
Gastronomy: As an aperitif, with fresh oysters, soft cheeses and fatty dishes.

Grape Variety: 50% Pinot Blanc + 50% Pinot Auxerrois
Production: The carefully hand picked grapes are collected in small "bottiches". They are rapidly taken to the press house for gentle pressing in modern pneumatic presses. After a natural decantation, the juice is transferred for fermentation into temperature controlled stainless steel tanks. A natural clarification throughout the winter will be followed by a light filtration before bottling in spring.
Appearance: Pale yellow with bright reflections.
Nose: Fresh and lively with a bouquet of citrus and white flowers, including apple blossom, with a discreet fruitiness.
Taste: Fresh and round, with low acidity. An easy drinking, everyday wine that pleases almost all palates with a dry finish.
Gastronomy: Ideal with fresh vegetables and salads, fish or white meat especially poultry with white wine and cream sauces, and traditional starters from Alsace such as onion tart, or light or white pizzas. Also pairs well with sushi or sashimi.

Appearance: Bright ruby.
Nose: Delicate hints of wild strawberries and blackcurrant.
Taste: The mouth is round and expressive of black fruits with silky tannins.
Gastronomy: Charcuterie, goats cheese and grilled or roasted meats.

Grape Varieties: 50% Chardonnay + 50% Rolle (Vermentino)
Production: Organically grown grapes are hand harvested from select parcels and aged in French oak barriques for 12 months.
Appearance: Yellow with light green reflections.
Nose: Complex with candied citrus, mild butter and vanilla.
Taste: Round mouthfeel. Both nose and palate are dominated by candied citrus aromas with vanilla, and butter notes. The attack is soft with ample mouthfeel and a fresh and long finish.
Gastronomy: A great wine for cheese or a meal, especially poultry or cream dishes.

Production: Pinot Noir Grés Rosé was hand harvested and produced using the saignée method followed by a 24 hour maceration to enhance the aroma.
Appearance: Vibrant blush pink.
Nose: Fine and delicate bouquet of red summer berries.
Taste: Fresh berries with a balanced dry finish. Perfect during warm weather!
Gastronomy: Pinot Noir Grés Rosé is an excellent choice for brunch or picnics, charcuteries, bbq and salads. It goes well with white meat and chicken, light cheese as well as grilled fish. Desserts that are not too sweet or based on red fruit will match nicely as well.

Taste: Cherries, and red fruits with a long mineral finish.
Gastronomy: Versatile everyday wine. Excellent with exotic spiced dishes such as paella with saffron, arrabbiata and Thai food.

Production: Organically grown grapes are hand harvested and parcellar selected. Four day maceration at low temperature followed by controlled temperature fermentation. Aging in French oak barriques for 24 months.
Appearance: Intense purple color.
Nose: Powerful nose of cherry pie and ripe red fruits.
Taste: On the palate fresh cherries, fresh with fudgy silky tannins.. The finish is elegant, smooth and long with notes of panettone/candied fruit.
Gastronomy: Best enjoyed with stews, heavy soups and roasted meats.

Nose: Expressive and elegant nose of floral and red fruit notes.
Taste: Full-bodied attack, dry with a fine acidity. Robust fruitiness and hints of cranberry.
Gastronomy: A complex wine for more complex foods. Try with hard aged cheese, foie gras, roasted meats and Thai cuisine. Also makes an excellent Thanksgiving wine.
