VALLFORMOSA CAVA

Since 1865 the Domènech family has worked the land in Penedès with the passion to obtain the best fruit of the vineyards. Francisco José Domènech (1839-1909) was the founder of this winemaking tradition in the family and the first to seek perfection. This 140 year tradition has translated into traditional method cavas which intimate the expression of the families personality, and honours five generations of wine growers.

Penedès Region

The Penedès wine appellation straddles two coastal provinces, Barcelona in the north, and Tarragona in the south and is a natural and historical region of Catalonia. Penedès produces fantastic still wines, and dazzling Cavas. Vines thrive here and grow very deep in the clay, sand and limestone substrates. Xarel·lo, Macabeo, Parellada and Garnacha are just a few of the key varieties grown here.

Vallformosa is a company that cares about the environment and is proactive in improving the environmental management of its activities. It pioneered the implementation of environmental measures and was one of the first companies to install its own biological wastewater treatment plant. Furthermore, Vallformosa uses low density (lighter than normal) bottles that save raw materials and reduce CO2 during transport, both for the glass processing plant and the final consumer. Vallformosa is a company that is working to reduce its CO2 emissions.

WINE TYPE: Brut Cava

PRODUCTION: Traditional method. Aged an average of 12 months on its lees

LOOK: Pale yellow with greenish reflections.

SMELL: Good aromatic intensity. Fruity aromas (green apple and fresh herbs like fennel) combined with notes of white flowers and citrus.

TASTE: The palate is very nice, fresh, tasty with good persistence and a long finish.

GASTRONOMY: Recommended for drinking on its own at any time, as an aperitif and with all kinds of food. Serve at 5-6ºC.

LOOK: Very pale cherry pink.

SMELL: On the nose aromas of red fruits like cherries, strawberries, also notable floral aromas.

TASTE: The palate is intense, fresh, large and persistent with hints of red fruits. Very fresh and lingering finish with hints of strawberry and raspberry.

GASTRONOMY: On it’s own as an aperitif, or with most foods, as it’s depth of flavor and acidity makes a nice companion to many dishes.

Serve chilled.
