Nicolo & Paradis

Beautifully balanced grower Champagne is what all Champagne's want to be when they grow up. Nicolo & Paradis is an excellent example of how time, knowledge and love can produce a glass of champagne that is in perfect harmony! A family business for three generations... founded in 1951 by Henri Nicolo, winemaker David Nicolo's grandfather. David took over the family business in 2011 after studying wine-growing culture and oenology. David expanded his business in 2013 by bringing the house of Champagne Camille PARADIS & Fils into the fold, thus Champagne Nicolo became Nicolo & Paradis.

Champagne, Côte des Bar

The Côte des Bar in the southern part of the Champagne area, is characterized by a warmer climate and a subsoil which predominantly provides good drainage and imparts a particular mineral flavour. The three major features–climate, subsoil and relief–create a mosaic of micro-terroirs affecting the characteristic qualities of the grapes. Pinot Noir is the predominant grape variety on the Côte des Bar where the cool, chalky terrain suits it perfectly.
